Thrillist partnered with New York Oyster Week to celebrate the great state of New York and the oysters and chefs which hail from it. Twelve New York chefs made their take on the oyster, highlighting the flavors for which their restaurant is best known. Their oyster creations were served alongside the barnacle in their natural form, provided by twelve oyster farmers.
